How to Make Tawa Litti

So if you are fond of the super-delicious Bihari food “Litti,” then you must gear up for its instant variant, Tawa Litti. It will have the mouth-watering and fragrant flavors of the traditional one, but not due to oven or barbecue grill. But just using a tawa, few simple ingredients will make for you the mouth-watering wheat flour balls filled with the delectable sattu. Let’s start making Tawa Litti step by step so that your taste buds can indulge in this delectable delight.

Ingredients:

  • 2 cups wheat flour
  • 1 cup roasted gram flour (sattu)
  • 2 tablespoons ghee (clarified butter)
  • 1 teaspoon carom seeds (ajwain)
  • 1 teaspoon nigella seeds (kalonji)
  • 1 teaspoon salt
  • Water (for kneading the dough)

For the Tawa Litti:

  • 1 tablespoon oil or ghee (for cooking)
  • Stuffed Litti balls (from the above recipe)
  • A sprinkle of water

For serving:

  • Chokha (optional but highly recommended; recipe included below)

Instructions:

Step 1: Making the Litti Dough

  1. In a mixing bowl, put wheat flour, ghee, carom seeds, nigella seeds, and salt.
  2. Add water gradually and knead the ingredients to form a firm and smooth dough.
  3. Cover the dough with a damp cloth and let it rest for 20-30 minutes.

Step 2: Preparing the Stuffing

  1. Mix roasted gram flour (sattu) with a pinch of salt in another vessel. Add a little water and prepare the semi-dry stuffing mixture, which would stick when pressed.

Step 3: Shaping the Litti

  1. Then take from that dough a portion and make it into small balls the size of lemons using your palms.
  2. Now flatten each ball, but leave in the center a spoonful of the stuffing.
  3. Then carefully seal the dough, so that the stuffing is wholly enclosed in it.

Step 4: Cooking Tawa Litti

  1. Heat a tawa or griddle on a low to medium flame. Brush a tablespoon of oil or ghee on it.
  2. Keep the stuffed Litti on the tawa and cook on a low to medium flame.
  3. Flip them occasionally till the crust develops golden-brown color on all sides. 
  4. For even cooking, few drops of water may be sprinkled on Litti and covered with the tawa lid for one minute.

Step 5: Serving Tawa Litti

  1. Once done with the Tawa Litti, take it off from fire and serve it hot.

  • 2 medium-sized eggplants
  • 2 medium-sized tomatoes
  • 2 medium-sized potatoes
  • 2 green chilies (finely chopped)
  • 1 medium-sized onion (finely chopped)
  • 2 cloves of garlic (crushed)
  • 1 tablespoon mustard oil
  • Salt and black pepper to taste
  • Fresh coriander leaves (for garnish)

Instructions for Chokha:

  1. Roast the eggplants, tomatoes, and potatoes over an open flame or in the oven till they turn black and are cooked inside.
  2. Peel the roasted vegetables’ skin and mash them together in a bowl.
  3. Add chopped green chilies, onions, crushed garlic, mustard oil, salt, and black pepper. Mix well.
  4. Garnish the chokha with fresh coriander leaves.
